This freshly milled whole emmer flour has a sweet, nutty, slightly earthy flavour. It is an ancient grain and a hulled tetraploid wheat, meaning that it's enclosed in a protective husk that requires hulling before milling. The additional step of hulling the grain makes it less suited to industrial agriculture, explaining why it's not a commonly available flour. It is exceptionally high protein, sitting at 17%, making it an incredible grain to add to meals to increase protein! We have used it to make delicious pasta and are currently testing it in our trusty Bread Loaf!

Milling Timeframe

Your flour will be freshly milled within 2-3 business days of your order. We mill to order to ensure maximum freshness and nutritional value.

Storage Advice

While the most fragile nutrients are highest in the first 72 hours, our flour remains rich in flavour, aroma and nourishment for several weeks. That’s still far beyond anything store-bought can offer. For peak nutrition, use it soon after arrival — or store it in the freezer to lock in the goodness. Use within 3 months of milling.

Non-refundable Policy

Due to the fresh, custom-milled nature of our products, all flour sales are final. We cannot accept returns or offer refunds on milled flour for food safety reasons.

Shipping

We ship Monday and Tuesdays to ensure your flour arrives fresh. Orders placed Wednesday-Sunday will be processed the following Monday.
